Scallion & Ginger Noodle Soup

The universal "you look pale" meal. Every Cantonese family has their own version; this is mine.

Why This Elixir Works

Ginger and scallion are the classic pungent-warm pair for supporting the body's surface when seasons change or a chill creeps in.

Ingredients

Wheat noodles 1 portion
Ginger 4 slices
Scallions 2 stalks, sliced
Egg 1
Chicken stock 2 cups
Sesame oil a few drops
Soy sauce 1 tsp

Instructions

Simmer ginger in stock 5 minutes.

Add noodles and cook per package directions.

Poach the egg in the broth in the last 2 minutes.

Season with soy and sesame oil; pile on scallions. Serve immediately, steam rising.
