My mother's weeknight fallback — a pile of bok choy that went into the wok the moment the ginger started to sizzle.

Ingredients

Bok choy or seasonal greens 1 lb
Fresh ginger, sliced 6 thin slices
Garlic 2 cloves
Neutral oil 1 tbsp
Salt to taste

Instructions

Wash and dry the greens. Slice ginger and garlic.

Heat oil in a wok over high heat. Add ginger and garlic, stir 15 seconds until fragrant.

Add greens, toss 2-3 minutes until just wilted but still bright.

Season with salt and serve immediately.
