Ingredients

Whole chicken (cut up) 1.5 lb / 700g
Dried goji berries 1/4 cup / 35g
Dried red dates (jujube) 8 pieces
Fresh ginger, sliced 3 slices
Water 8 cups / 2L
Salt to taste

Blanch the chicken. Place chicken pieces in a pot of cold water, bring to a boil, then drain and rinse. This removes impurities and ensures a clear broth.

Simmer gently. Combine chicken, ginger, and water in a clean pot. Bring to a boil, then reduce to the gentlest simmer. Cook uncovered for 60 minutes, skimming occasionally.

Add goji and dates. Add dried goji berries and red dates. Continue simmering for 20 more minutes until the meat is tender and the broth is golden.

Season and serve. Add salt to taste. Serve hot, distributing the goji berries and dates evenly among bowls. The broth should be sipped slowly.
