Why This Elixir Works

Bitter melon is bitter and cool — the classic flavor for clearing summer heat from the body. Paired with beef's nourishing depth, it is a complete traditional plate.

Ingredients

Bitter melon 1 large
Beef (sliced thin) 1/2 lb
Fermented black beans 1 tbsp
Garlic 3 cloves
Soy sauce 1 tbsp
Oil 1 tbsp

Instructions

Halve the bitter melon, scoop out seeds, slice thinly. Salt lightly and rest 10 minutes, then rinse — this tames the bitterness.

Stir-fry beef over high heat until just browned. Set aside.

Stir-fry garlic and black beans 15 seconds. Add bitter melon and toss 3 minutes.

Return beef, add soy sauce, toss 1 minute. Serve hot.
