Bitter melon is an acquired taste worth acquiring. Stir-fried with beef, salted black beans, and a whisper of garlic, it becomes a deeply satisfying summer plate.
Bitter Melon & Beef Stir-Fry
The first bitter melon I ever ate made me wince. The tenth made me crave it. Give it a chance.
Why This Elixir Works
Bitter melon is bitter and cool — the classic flavor for clearing summer heat from the body. Paired with beef's nourishing depth, it is a complete traditional plate.

The Refining Process
- Step 1
Halve the bitter melon, scoop out seeds, slice thinly. Salt lightly and rest 10 minutes, then rinse — this tames the bitterness.
- Step 2
Stir-fry beef over high heat until just browned. Set aside.
- Step 3
Stir-fry garlic and black beans 15 seconds. Add bitter melon and toss 3 minutes.
- Step 4
Return beef, add soy sauce, toss 1 minute. Serve hot.
Alchemist's Note
