My mother froze mung bean soup into popsicles every July. Even now, the smell of simmering mung beans means summer has truly arrived.

Ingredients

Mung beans 1 cup
Water 8 cups
Rock sugar 3-4 tbsp (optional)
Lime 1 wedge (optional)

Instructions
